Chicken Pot Pie

Chicken pie with vegetables, good comfort food. By using pre made pastry the preparation drops considerably.
The ingredients »
- 1 cup of potatoes, diced
- 1 cup of chopped onions
- 1 cup of celery, diced
- 1 cup of chopped carrots
- 1 cup of melted margarine
- 1 cup of all-purpose flour
- 2 cups of chicken broth
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 4 cups of chopped cooked chicken
- 1 x puff pastry pie crusts
How to make »
- Saute onion, celery, carrots and potatoes in butter for 10 minutes. Add flour to sauteed mixture, stirring well and continue to cook for a couple of minutes stirring constantly.
- Gradually stir the broth into the vegetable mixture. Cook over medium heat stirring constantly until thickened and bubbly.
- Stir in salt and pepper, add chicken, and stir well. Pour into a shallow suitable dish and top with pie crust.
- Make sure there are slits in the top and bake at 400F for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.
