Minestrone Soup

A Spanish style soup recipe suitable for dinner, using the simmering method.

This is a very traditional soup recipe and one of the best. It incorporates a lot vegetables which makes it very healthy and tasty.

The ingredients »

  • 1 cup of finely minced celery
  • 1 cup of finely minced onion
  • 1 cup of finely minced carrot
  • 1 cup of butter
  • 1 cup of garbanzo beans
  • 1 cup of kidney beans
  • 1 cup of whole dried peas
  • 1 cup of white pea beans
  • 3 cups of sliced carrots
  • 3 cups of coarsely chopped onion
  • 3 cups of sliced celery
  • 3 cups of chopped bell pepper
  • 1 cup of rice or barley
  • 1 cup of shell macaroni
  • 2 tablespoons of minced parsley
  • 1 teaspoon of oregano
  • 1 teaspoon of basil
  • 2 teaspoons of soy sauce
  • 1 cup of parmesan cheese, grated

How to make »

  1. Slowly saute finely minced celery, onion and carrot in butter until very brown.
  2. Add beans and peas and about 3 quarts of water. Cook slowly until beans are almost done (check garbanzos - they will take the longest) about 2 to 2 1/2 hours.
  3. Add the remaining vegetables, rice (or barley) and spices and more water if necessary and cook another hour.
  4. About 20 minutes before serving time, add the macaroni and more water if needed.
  5. Complete cooking and season with black pepper to taste. Ladle into bowls and sprinkle with Parmesan cheese. Serve with crusty garlic bread.
