Pistachio Filet Of Sole

A fish recipe suitable for dinner, using the frying method.

I love pistachio and I love fish. Together they are heaven. Sole is such a great fish as well, really easy to remove the bones by just sliding off the fillets.

The ingredients »

  • 8 x half inch thick filets of sole
  • 1 cup of of milk
  • 1 cup of finely chopped pistachios
  • 1 cup of bread crumbs
  • 2 x eggs, beaten
  • 4 tablespoons of butter
  • 2 tablespoons of oil

How to make »

  1. In a shallow bowl, add eggs and milk and whisk together.
  2. Get two separate flat dishes. In the first place the flour and the second the bread crumbs and nuts. Make sure the nuts and bread crumbs are mixed together.
  3. Cover each filet of fish in flour then egg mixture and then in the nut and bread crumb mixture. Press firmly on the filets so the nuts and bread crumbs will stick.
  4. Heat the butter and oil in a large fry pan. Let the fat brown slightly before adding filets.
  5. Cook each filet for about 3-4 minutes on each side. Serve with rice and a salad.
